煮酒 Jaju (자주)
Jaju is wine heated in its vessel until it matures. The Grain section says only that the flavour is unusually fine and suits summer drinking, and lists beside it ihwaju (梨花酒), white and heady, a wine for spring and summer.

HomiclubJaju is liquor heated in its own vessel in a water bath after brewing. That single heating kept it from souring quickly in the heat, which is why it was treated as a summer drink.
